Cheeseburger Macaroni and Cheese

This flavorful cheddar mac is inspired by a classic cheeseburger. Sharp Wisconsin cheddar, macaroni and perfectly seasoned ground beef are complemented by fresh bits of tomato and arugula.

Cooking Instructions

Place tomatoes in a mesh sieve; toss with 1/4 teaspoon salt. Set aside to drain.

Cook macaroni according to package directions; drain. Meanwhile, brown ground beef with onion, paprika, cumin and remaining salt in olive oil in a large oven-proof skillet until beef is no longer pink. Reduce heat to low. Add garlic; cook and stir for 1 minute.  Remove from heat. Fold in 1 cup reserved tomatoes, the macaroni and arugula.

Melt butter in heavy, large saucepan over medium-low heat. Whisk in flour until smooth. Gradually whisk in milk. Bring to boil; cook and whisk for 2 minutes or until thickened. Reduce heat to low; gradually stir in cheddar until melted.

Stir cheese sauce into macaroni mixture. Sprinkle with parmesan. Top with remaining tomatoes. Broil on high until top is slightly browned and mixture is bubbling, about 3-5 minutes.
