Easy Brie-zy Mac and Cheese

Creamy brie cheese and just a touch of sherry create a rich cheese sauce for this mac and cheese that is reminiscent of fondue.

Cook pasta according to package directions; drain. Place in large bowl. Meanwhile, sauté mushrooms in butter in a large skillet until tender. Transfer to a medium bowl.

Combine milk, flour, sherry and nutmeg in small sauce pan until smooth. Bring to gentle boil over medium heat, stirring constantly. Cook and whisk for 2 minutes or until thickened. Reduce heat to low; gradually stir in brie until melted (sauce will be thick). Season with salt and pepper to taste. Pour sauce over pasta; toss to coat.

Serve immediately in individual bowls; top with mushroom-spinach mixture and walnuts.
