Summer Greens Mac and Cheese

Get in your green veggies! Packed with fresh zucchini, Swiss chard and okra, this pasta dish is coated with a rich and creamy fontina cheese sauce.

Cooking Instructions

Prepare pasta according to package directions; drain. Meanwhile, sauté okra and Swiss chard in 2 tablespoons butter until tender. Remove from skillet; keep warm.

Melt remaining butter in Dutch oven over medium-low heat. Add garlic; cook and stir for 1 minute. Whisk in flour until combined. Gradually whisk in chicken stock and milk. Bring to boil; cook and whisk for 2 minutes or until thickened. Reduce heat to low; gradually stir in fontina until melted. Add pasta, okra-Swiss chard mixture and zucchini; heat through, stirring constantly.


Recipe Tip: Blanched fresh peas or green beans could be substituted for a green veggie in this recipe.
