Barbecue lovers take note! Use up your leftover beef brisket to create a stick-to-your-ribs macaroni and cheese with the bold flavors of apple smoked cheddar cheese, sweet honey barbecue sauce and rich and tangy blue cheese. It’s heaven on a plate.

Cook macaroni according to package directions until al dente; drain.

Meanwhile, melt butter in a Dutch oven over medium-low heat. Whisk in flour until smooth. Gradually, whisk in milk and ground mustard. Bring to boil; cook and whisk for 2 minutes or until thickened. Reduce heat to low; gradually stir in cheddar until melted. Stir in macaroni and brisket. Season with salt and pepper to taste. Remove from the heat.

Transfer to greased 13 x 9-inch baking dish. Drizzle with barbecue sauce. Sprinkle with blue cheese. Broil 4 inches from the heat for 5-10 minutes until bubbly and cheese begins to brown (watch closely).

Any brand of Wisconsin apple smoked cheddar or blue cheese can be used.
