Creamy Poblano Mac and Cheese

Broil poblano peppers 4 inches from heat on a 15 x 10-inch baking sheet until skin is blistered. Rotate a quarter turn with tongs until all sides of peppers are blistered and blackened, about 3-5 minutes per side (watch closely). Transfer to a bowl immediately; cover and let stand for 20 minutes. Peel away blackened skin and discard. Cut peppers lengthwise; remove tops, seeds and membranes. Chop peppers; set aside.

Cook pasta according to package directions; drain.

Melt butter in same pan over medium-low heat. Whisk in cumin, garlic powder and paprika. Reduce heat to low. Add milk, yogurt, monterey jack, cheddar, pasta and reserved poblano peppers; heat through, stirring constantly (do not boil). Season with salt and pepper to taste. Serve warm.


Recipe Tip:
Any brand of Wisconsin montery jack or white cheddar cheese can be used.
