Autumn Harvest Mac and Cheese

Experience the sweet autumn flavors of fresh pear and dried cranberries in this lovely mac and cheese coated with a decadent brie and blue cheese sauce. The sprinkle of toasted walnuts adds a nice crunch.

Heat oven to 350°F.

Toast walnuts in a dry, large skillet over medium heat until just golden brown, about 3 minutes. Set aside.

Sauté onion in 1 tablespoon butter and olive oil in the same skillet until tender. Reduce heat to medium-low; cook for 5-10 minutes or until starting to brown, stirring occasionally. Stir in pear and cranberries. Season with salt and pepper to taste. Cook and stir for 4-6 minutes or until pear is tender. Transfer to a large bowl; keep warm.

Cook pasta according to package directions until al dente; drain, reserving 1 cup pasta water. Add pasta to pear mixture.

Meanwhile, melt remaining butter in the same skillet over medium-low heat. Whisk in flour until smooth. Gradually whisk in milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat to low; gradually stir in brie and three-fourths of blue cheese until melted. Pour cheese sauce over pasta. Drizzle with balsamic vinegar; toss to coat. Stir in pasta water until desired consistency, adding 2 tablespoons at a time. Season with salt and pepper to taste.

Spoon into a greased 13 x 9-inch baking dish. Sprinkle with bread crumbs and remaining blue cheese. Bake for 25-30 minutes or until bubbly. Garnish with walnuts.


Recipe Tip:
Any brand of Wisconsin brie or blue cheese can be used.
