Blend chili garlic sauce, hoisin, Sriracha, ponzu and lime juice together in a small bowl and set aside.

In a stock pot, add beef stock, broths, ginger, star anise, garlic, celery salt, nutmeg, and white pepper. Bring to a rapid boil and reduce heat. Cover and simmer for 15 minutes. Strain broth, reserving liquid. Add broth back to the pan and cook noodles for 4 minutes. Remove noodles and reserve broth for plating.

Sprinkle salt and pepper on both sides of beef and drizzle with lime juice. Set aside. Equally spread butter on one side of each piece of naan bread (preferably bubbly side). On the other side, spread chili garlic mixture.

Bring nonstick skillet to medium heat and place naan buttered side down. Layer with 1 slice each of havarti and monterey jack. Equally top each with beef slices, noodles, red onions, bean sprouts, cilantro, green onion, Thai basil, jalapeño slices and carrots. Add another slice of havarti and monterey jack and top with buttered-side-up naan bread. Cover with lid. After 3 minutes, remove lid and gently flip sandwich. Turn heat up to medium high and let cheese melt, approximately 3 minutes. Serve with dipping broth.


Recipe Tips:
  • If you cannot find Thai basil, just add another 1/3 cup of cilantro.
  • Any brand of Wisconsin havarti or monterey jack cheese can be used.
