Comforting Gnocchi and Triple Cheese

Lovely pillows of potato gnocchi are treated to a scrumptious cheese sauce with a blend of petite swiss, white cheddar and parmesan. A sprinkle of bread crumbs, fresh parsley and an added touch of parmesan finishes off the medley of flavors in this comforting dish.

Heat oven to 375°F.

Cook gnocchi according to package directions; drain and keep warm.

Melt 3 tablespoons butter in a Dutch oven over medium-low heat. Whisk in flour until light golden brown. Add garlic; cook and stir for 1 minute. Gradually whisk in milk. Bring to a boil; cook and whisk for 2 minutes or until thickened. Reduce heat to low; gradually stir in petite swiss, cheddar and ½ cup parmesan until melted. Stir in gnocchi, salt and pepper. Remove from the heat.

Spoon gnocchi mixture into a greased 8-inch baking dish. Melt remaining butter in a bowl; toss with bread crumbs, parsley and remaining parmesan to coat. Sprinkle bread crumb mixture over pasta. Bake for 10-15 minutes or until topping is lightly browned and sauce is bubbly. Let stand 5 minutes before serving.

Any brand of Wisconsin swiss, white cheddar or parmesan can be used.
