Italian Mac and Cheese with Pancetta

With a generous sprinkle of grated parmesan and olive oil-tossed breadcrumbs, this Italian mac and cheese has a tantalizingly, crusty topping. The crust gives way to a scrumptious pasta and cheese filling flecked with diced pancetta and fragrant, fresh basil and parsley.

Heat oven to 350°F.

Cook pasta according to package directions until al dente; drain. Meanwhile, crisp pancetta in a small skillet over medium heat. Remove pancetta to a paper towel with a slotted spoon to drain.

Melt butter in a Dutch oven over medium-low heat. Whisk in flour until smooth. Gradually whisk in milk and red pepper flakes. Bring to a boil; cook and whisk for 2 minutes or until thickened. Reduce heat to low; gradually stir in fontiago until melted. Stir in pasta, pancetta, basil and parsley. Remove from the heat. Season with salt and pepper to taste.

Spoon into a greased 3-quart or 13 x 9-inch baking dish. Combine bread crumbs with olive oil. Sprinkle pasta mixture with parmesan and bread crumbs. Bake for 30-35 minutes or until topping is golden brown and sauce is bubbly.
