Chipotle Mac and Cheese

Spice up your menu with this unique mac and cheese prepared with mild, rich and slightly tangy queso oaxaca cheese melted with nutty parmesan. The chipotle peppers add a spicy kick, but you can halve them in the recipe if you’re not a fan of the heat.

Cooking Instructions

Heat oven to 350°F.

Cook macaroni according to package directions until al dente; drain.

Melt butter in a Dutch oven over medium-low heat. Whisk in flour until smooth. Add garlic; cook and stir for 1 minute. Gradually whisk in milk and salt. Bring to boil; cook and whisk for 2 minutes or until thickened. Reduce heat to low; gradually stir in queso oaxaca and parmesan until melted. Stir in macaroni, chipotle peppers, lemon zest, lemon juice and cilantro. Remove from the heat.

Spoon macaroni mixture into a greased 2-quart baking dish. Bake for 25-30 minutes or until top is golden brown. Let stand 5 minutes before serving.

Any brand of Wisconsin queso oaxaca or parmesan cheese can be used.
