Beat mascarpone, sweetened condensed milk and lime juice in a medium bowl until smooth. Transfer half of the mascarpone mixture to a pastry bag; set aside. Beat lime zest and green food coloring, if desired, into remaining cheese mixture until blended. Spoon into another pastry bag.

Combine graham cracker crumbs and sugar in a small bowl; stir in butter. Sprinkle 1 teaspoon crumb mixture in each of eight 3-ounce glasses.

Layer each with 1 tablespoon white mascarpone mixture and 1 tablespoon green mascarpone mixture. Repeat layers, starting with the crumb mixture. Top with whipped cream. Sprinkle with remaining crumb mixture. Garnish with lime wedges. Refrigerate until serving.


Recipe Tip:
  • Any brand of Wisconsin mascarpone cheese can be used.
  • Fresh limes can be substituted for Key limes in the recipe. Four medium limes juiced yields about 1/3 cup lime juice.
