Queso Beer Cheese Dip

Get the fiesta started with warm queso blended with flavors of Mexican-style lager beer, sweet and spicy peppers and V&V Supremo’s Queso Chihuahua® Quesadilla cheese. Rich and gooey, it’s an easy entertaining favorite. With one taste of this dip, your guests will be saying, “Muchas gracias!”

Combine Queso Chihuahua® Quesadilla and cornstarch in medium bowl. Set aside.

Cook red pepper and jalapeño in butter in a large skillet over medium-low heat until tender, stirring occasionally. Gradually stir in evaporated milk and seasonings. Bring to a gentle boil over medium heat. Reduce heat to low; gradually stir in the reserved Queso Chihuahua® Quesadilla mixture until melted. Stir in beer; heat through. Serve immediately with tortilla chips.


Recipe Tip:
  • Any brand of Wisconsin queso quesadilla cheese can be used.
  • The dip thickens as it cools. To reheat in the microwave: Warm dip in a microwave-safe bowl on high for 30-60 second intervals, depending on amount. Stir dip between each interval.
  • We used Modelo Negra™ beer in this recipe.
  • Want less spicy heat? With a whole jalapeño, this dip has zip! To reduce the heat, remove the seeds and membranes before dicing the jalapeño pepper.
  • Avoid touching face when handling the jalapeño pepper. Consider wearing gloves, as oils may burn skin.
  • This dip is yummy served with steamed veggies, over enchiladas, on tater tots or as the cheese sauce for from-scratch mac and cheese.
