Ham and Cheddar Frittata

Use up your leftover ham in this easy frittata recipe. Plate it with fresh baby spinach and your favorite fruit tossed with a vinaigrette for a light lunch.

Bring 4 cups of water to boil in a large saucpan. Add asparagus; cook for 2-4 minutes or until asparagus is crisp-tender. Drain; immediately place aspargus in ice water. Drain well and pat dry.

Whisk eggs, milk, salt and pepper to taste in a bowl. Stir in cheddar.

Melt butter in 10-inch cast iron or oven-safe skillet over medium heat, swirling butter to coat bottom and sides of pan. Add ham and green onions; cook and stir for 2-3 minutes or until heated through. Stir in asparagus. Pour in egg mixture. Lift edges, as eggs set, allowing the uncooked liquid to flow underneath. Cook until eggs are almost set, about 7 minutes.

Broil, 6 inches from the heat, on high until eggs are set, about 1-3 minutes (watch closely). Remove from oven. Let stand 5 minutes before slicing.
