Sweet and Spicy Jalapeño Cheddar Stuffed Cheeseburgers

In a medium bowl, mix together ground beef, green onion, sweet chili sauce and seasonings with your hands until well combined. On a sheet of parchment paper, divide beef mixture and form eight small patties (equal to about the size of a round coaster). On four of the cheeseburger patties, place 1 ounce (or 1 slice) of cheese in the center.

Cover the cheese-topped cheeseburger patties with a second patty, and seal the edges with your fingers so the cheese is completely covered. Over a grill pan or on an outdoor grill, cook the patties to desired doneness. Remove the burgers from the heat and let sit. Then, grill the pineapple rings for 1-2 minutes per side or until each side is slightly charred.

While the burgers and pineapple are grilling, mix together mayo, 2 tablespoons sweet chili sauce and Tabasco sauce in a small bowl. To serve, spread 1-2 tablespoons of the sweet chili mayo on the bottom of the bun and layer with 1/4 avocado, 1 grilled pineapple ring, one cheese-stuffed burger and the other half of the bun. Devour.
