Add the meat to a large mixing bowl then sprinkle with salt and pepper. Use a fork to carefully mix the meat and seasoning together without mashing it. Divide the meat into four equal portions (about 6 ounces each). Form each portion loosely into a 3/4-inch thick burger.

Heat grill, broiler or sauté pan and cook hamburgers for 3-4 minutes on each side until almost done. Turn off heat and place two slices of the aged cheddar on each patty. Allow to melt; then remove to a plate and cover with aluminum foil. Allow hamburgers to rest for 5 minutes.

In the meantime, heat a sauté pan over medium heat. Add about two tablespoons of olive oil, then the onions and peppers. Sauté until onions are sweet. Whisk two eggs in a bowl with a pinch of salt.

Heat a small frying pan over medium heat; then add one tablespoon of butter. When butter is melted and begins to bubble, pour eggs into the center of pan and stir with a rubber spatula for about 5 seconds. Using a spatula, move around the edge of the egg mixture to loosen the edges. After about 10-15 seconds, the eggs should be a semi-solid mass. Add three slices of swiss. Once the cheese is melted, shake the pan to loosen the omelet then fold over half of the omelet. Remove to a plate; repeat with the remaining two eggs to make a second omelet. Cut each omelet into two, creating four halves.

Assemble the burger by spreading mayonnaise on both halves of bun. Place hamburger patty on bottom half and add a small handful of sautéed onions and peppers. Top with ham, one half of an omelet and bun top. Enjoy!
