Heat oven to 425°F. In medium skillet, melt butter over medium-high heat. Add onion and cook, stirring occasionally. Add mushrooms and continue to cook, stirring occasionally, until vegetables are tender. Remove from the heat and let cool slightly.

In medium bowl, combine 1 1/2 cups mozzarella, cream cheese, parmesan, sour cream, Italian seasoning and garlic powder. Season with salt and pepper. Reserve about 1 tablespoon each of spinach, tomatoes, olives and mushroom mixture. Add remainder to bowl with cheese mixture; fold in gently.

Spread dip into small baking dish. Sprinkle with remaining mozzarella; dot with reserved vegetables. Bake 20-25 minutes. Serve warm with crackers, pita chips, etc.
