Pepato and Cheddar Stovetop Mac and Cheese

Spiced with black peppercorns, pepato cheese blended with sharp cheddar adds robust flavor to this mac and cheese without a lot of extra ingredients.

Cook pasta according to package instructions; drain. Transfer to large bowl; keep warm. Meanwhile, sauté mushrooms and leek in olive oil in a skillet over medium heat until tender. Reduce heat to medium-low. Add garlic; cook and stir for 1 minute. Remove from the heat.

Bring cream to a gentle boil in a large saucepan over medium heat, stirring constantly. Reduce heat to low; gradually stir in cheddar and pepato until melted. Stir in chives and mushroom mixture; heat through, stirring constantly. Pour cheese sauce over pasta; stir to combine. Season with salt to taste.

Garnish with additional pepato just before serving.


Recipe Tip:
  • Any brand of Wisconsin sharp cheddar and pepato cheese can be used.
  • You can substitute pepato with romano and fresh ground pepper.
