Place 2 slices sharp cheddar on each bread slice; set aside.

Pour frying or cooking oil to depth of 2-3 inches in basket of deep fat fryer or heavy deep saucepan; heat. When a pinch of flour sizzles when scattered in the oil, add pierogi to basket and fry in hot oil 30 seconds. The pierogi will blister and turn lightly golden brown. Remove from oil, drain on paper towels and set aside.

Heat sauté pan over high heat 30 seconds. Add 3 teaspoons vegetable oil; heat an additional 30 seconds. Add reserved pierogi; fry until they are slightly brown on both sides. Add onions, cabbage and kraut spice mixture. Sauté 30 seconds. Add vodka-cider vinegar blend; toss and reduce at vigorous boil, making sure ingredients don't stick to pan, until nearly all the liquid evaporates.

Heat broiler. Remove pierogi from sauté pan and place on 1 bread slice. Spread remaining mixture from pan evenly over remaining bread slice. Using a wide spatula, place each bread slice uncovered-side-down (open face), on small baking sheet. Broil 45 seconds, or until cheese is completely melted. Remove from broiler.

Close sandwich, place on cutting board and cut in half. Serve immediately.
