Mascarpone Spread with Brandied Walnuts

Heat oven to 350°F. Spread walnuts on rimmed baking sheet and toast 10 to 15 minutes or until fragrant and lightly browned. Remove from oven and cool.

Meanwhile, in large bowl, combine mascarpone, grated onion, minced garlic and salt. Spoon mascarpone mixture onto a piece of plastic wrap and shape into a flat disk measuring 4 ½-inches in diameter by 1 1/2-inches tall. Refrigerate at least 1 hour.

Chop toasted walnuts. Melt butter with brown sugar in small saucepan over medium heat. Stir to combine. Add walnuts and cook together for one minute. Remove from heat and add brandy. Cool.

To serve, place mascarpone disk on serving board or platter. Spoon walnut mixture over top. Use your hands to coat sides with walnut mixture. Place extra walnut mixture in a ramekin and serve on the side. Serve with crackers.
