Heat oven to 400°F. Line baking sheet with foil. Place potatoes on baking sheet and prick all over with fork. Bake 30 to 40 minutes until soft. Remove from oven; cool slightly.

Meanwhile, fry bacon until crisp. Remove to paper towels to drain and crumble when cool: set aside.

When potatoes are cool enough to handle, halve lengthwise. Scoop out potatoes with an ice cream scoop leaving some pulp around the edges. Place potato halves on baking sheet cut-side-up. Brush lightly with butter. Turn over and brush outsides with butter. Return to oven 5 to 8 minutes.

Flip halves and cook 3 to 5 minutes more until beginning to crisp. Remove from oven and stuff skins with cheddar, then sprinkle with bacon. Return to oven until cheese is melted, 5 to 7 minutes. Garnish with sour cream and green onion.
