Smoky Russian Grilled Cheese Sandwich

Place 2 slices smoked gouda on each bread slice; set aside.

Heat flat top griddle. Spray with light film of cooking spray. Place turkey slices in a shingle pattern on hot grill; Slightly brown both sides, using a wide spatula to carefully turn over. Place shingled slices on 1 bread slice. Set bread aside.

Heat sauté pan over high heat 30 seconds. Add vegetable oil and heat additional 30 seconds. Add onions, cabbage and sauerkraut spice mixture. Sauté 30 seconds. Add vodka-cider vinegar blend; toss. Reduce mixture at vigorous boil, making sure mixture does not stick to pan, until nearly all liquid evaporates.

Heat broiler. Spread reduced mixture evenly over bread slice covered only with cheese. Using a wide spatula, place each bread slice, uncovered-sides-down (open face) on small baking sheet. Broil 45 seconds or until cheese is completely melted. Remove from broiler; place on cutting board.

Close sandwich, placing slice with kraut side on top. Cut in half and serve immediately with Russian salad dressing.
