Beat eggs in large bowl. Whisk in pepper, salt and nutmeg.

Melt butter in large skillet over medium heat. Sauté onion and bell peppers until crisp-tender. Reduce heat to medium-low. Pour in egg mixture; cook and stir until almost set. Add spinach. Dollop with mascarpone. Cook and stir until eggs are set. Garnish with parmesan.
