Beat eggs in large bowl. Add salt, pepper and nutmeg; whisk well. Fold in mascarpone cheese and spinach; set aside.

Melt butter in large skillet over medium heat. Add onion and sauté 5 minutes or just until onions start to brown. Reduce heat to medium-low. Pour in egg mixture, stirring frequently using spatula to break up mascarpone cheese. Add sliced mixed peppers. Continue turning eggs until soft set and spinach is wilted, about 5 minutes. Transfer to serving plates and top with parmesan shavings. Serve immediately.
