New Mexican Pepper Jack Burger with Green Chile

In small bowl combine ground beef, cumin, chili powder, salt and pepper; mix well and shape into patty. Set aside.

In medium skillet, add butter and flour; cook over medium heat until mixture is smooth. Add serrano pepper and garlic; cook 1 minute or until pepper is softened. Stir in green chiles and cook, stirring occasionally, until sauce is thickened and flour taste is cooked out, about 2 minutes. Set sauce aside.

Grill or broil beef patty about 4 minutes each side for medium doneness or until internal temperature reaches 155°F (temperature will continue to rise to 160°F). During final 1-2 minutes cooking time, place pepper jack slices over patty and grill or broil just until cheese starts to melt. Place patty on bottom half of bun and top with 3 tablespoons green chile sauce. Top with red onion and remaining bun top.
