In large bowl, gently mix ground beef, salt and pepper. Shape into four (4-inch) patties, about 1/2 inch thick. Heat a heavy skillet, preferably cast iron, over medium-high heat until hot but not smoking.

Place patties in skillet and cook 5 to 7 minutes. Using spatula, turn. Top each patty with 2 cheddar slices, overlapping. Cook 4 to 5 minutes for medium doneness and until cheese is melted.

Place each patty on a warm bun bottom. Add desired toppings and bun top.
