In small bowl, combine syrup or preserves with mustard. Spread 1 side of 1 waffle with mustard mixture. Top with half shredded cheese (about 1/4 cup) and ham, followed by remaining cheese and second waffle.

Pour egg batter into shallow bowl; carefully dip each side of waffle sandwich in egg batter. Cook sandwich on hot griddle or sandwich press 3 to 5 minutes or until egg mixture is lightly browned and cheese is melted. Serve warm with additional syrup and apricot preserves.
