Brat and Onion Ring Pizza with Cheddar-Colby Ale Sauce

Heat oven to 425°F. Place crust on pizza pan; spread beer cheese sauce evenly over crust leaving 1/2-inch edge. Sprinkle with cheddar. Arrange brat slices over top; sprinkle with Colby. Bake pizza 8 to 10 minutes, or until golden brown and cheese is bubbling. Top with sautéed onions and fried onion rings; serve with mustard.


For Wisconsin cheddar-Colby ale sauce:

In medium saucepan, melt butter over medium heat. Add flour to make roux. Cook 2 minutes, whisking occasionally. Slowly whisk in milk and beer; increase heat to medium-high and bring to simmer, whisking occasionally. Add mustard and Worcestershire sauce; simmer, whisking occasionally, until sauce thickens.

Add cheese in batches, whisking after each addition to melt cheese completely. Season with salt, pepper, Worcestershire and hot sauce.
