5 cups low sodium chicken broth, defatted, divided
1 1/2 cups onion, chopped
3 cups fresh kale, chopped
3 cups peeled sweet potato, diced
1 cup smoked turkey breast, diced
Seasonings, to taste
8 slices low-fat Wisconsin Muenster Cheese, 1 ounce per slice
In stock pot, heat 1/2 cup stock and onion. Simmer, covered, 5 minutes. Add kale, sweet potatoes, and remaining 4 1/2 cups chicken broth; return to a simmer and cook 35 to 40 minutes or until kale and potatoes are tender. Adjust seasoning, if desired. To serve, ladle 1 cup soup into crock and top with a slice of Muenster Cheese. Serve hot.
