Chocolate Cheese Pie

Servings: 6


2 cups chocolate cookie crumbs
1/2 cup powdered sugar
1/2 cup melted butter
2 tablespoons unflavored gelatin
1/2 cup cold water
4 eggs, separated
1/3 cup flour
3/4 cup sugar, divided
1/2 cup milk, scalded
3 cups cream-style cottage cheese, sieved
Grated rind of 2 lemons
2 tablespoons lemon juice
2 teaspoons lemon extract
1 teaspoon vanilla
1 cup whipping cream, whipped

Cooking Directions:

Combine chocolate cookie crumbs, powdered sugar, and melted butter. Cover the bottom and 2 inches of the sides of a 9-inch springform pan.

Soften gelatin in cold water. Beat together egg yolks, flour, 1/4 cup of the sugar and scalded milk. Cook over medium heat, stirring constantly, until custard thickens. Add softened gelatin and stir until dissolved. Cool. Add cheese, lemon flavoring, vanilla and whipped cream. Last, fold in the beaten egg whites to which the remaining 1/2 cup of sugar has been added gradually. Pour into crust and chill until set.
