12 cups mixed salad greens3/4 cup coarsely grated carrot1 pint cherry tomatoes, washed and stemmed2/3 cup prepared vinaigrette or Italian dressing2 cups (6 ounces) grated Wisconsin pepato cheese
In a large salad bowl, toss the greens, carrot, tomatoes and dressing until combined. Top with cheese. To serve, divide into 6 serving bowls.Note: asiago or romano and coarsely ground black peppercorns may be substituted for the pepato.
