Pepper-Cheese Salad Supreme
12 cups mixed salad greens
3/4 cup coarsely grated carrot
1 pint cherry tomatoes, washed and stemmed
2/3 cup prepared vinaigrette or Italian dressing
2 cups (6 ounces) grated Wisconsin Pepato Cheese
In a large salad bowl, toss the greens, carrot, tomatoes and dressing until combined. Top with cheese. To serve, divide into 6 serving bowls.
Note: Asiago or Romano Cheese and coarsely ground black peppercorns may be substituted for the Pepato Cheese.
