Chocolate Sandwich Cookies

Servings: 30

2 cups flour
1/3 cup unsweetened cocoa powder
1 teaspoon baking soda
1/4 teaspoon salt
6 tablespoons butter
1 cup sugar
1 egg
1 1/2 cups milk
2 tablespoons flour
1/2 cup butter
1/2 cup sugar
1 teaspoon vanilla

Cooking Directions:

In a mixing bowl stir together the 2 cups flour, cocoa, baking soda, and salt. In a large mixer bowl beat 6 tablespoons butter for 30 seconds. Add the 1 cup sugar; beat until fluffy. Beat in egg. Add flour mixture and 1 cup of the milk alternately to the butter mixture, beating after each addition. Drop by rounded teaspoonfuls on greased baking sheets. Bake at 425°F for about 7 minutes or until set. Remove to wire racks to cool.

In a small saucepan stir together remaining 1/2 cup milk and 2 tablespoons flour. Cook and stir until thickened and bubbly; cook and stir 1 to 2 minutes more. Cool slightly. In a small mixing bowl beat 1/2 cup butter for 30 seconds. Add remaining 1/2 cup sugar; beat until fluffy. Add cooled flour mixture and vanilla. Beat until smooth. Spread on flat side of half the cooled cookies; top with remaining cookies.
