1/2 cup chopped onion1/4 cup butter1/4 cup flour1/2 cup milk3 cups chicken broth or 2 cans (10 3/4 ounces each) condensed chicken broth3 cups half-and-half4 cups (16 ounces) finely shredded Wisconsin sharp cheddar cheeseDash cayenne pepper
Sauté onion in butter over medium heat. Blend together flour and milk. Gradually stir into onion and cook 1 minute. Add chicken broth and half-and-half. Heat to boiling. Gradually add cheese, stirring constantly, until melted. Stir in cayenne pepper. Serve hot. Garnish with popcorn and paprika, if desired.
