Black Bean Quesadillas with Monterey Jack Cheese
2 whole wheat tortillas
1/4 cup black beans, cooked, seasoned, mashed to form paste
1/3 cup Wisconsin Monterey Jack Cheese, shredded
1/3 cup pico de gallo or hot salsa
Spread one tortilla with the mashed black beans. Top with cheese and pico de gallo and evenly spread over black beans. Place other tortilla on top, brush with olive oil on each side, and grill until lightly golden and warm throughout.
