1 pizza crust (12 inches)3 ounces pizza sauce1/2 lime, juiced5 ounces jerk marinated chicken, diced, cooked2 ounces pineapple, diced1/4 ounce coconut flakes1/4 ounce scallion, chopped fine2 ounces sweet pepper, julienned5 ounces Wisconsin queso blanco con fruitas cheese, shredded, divided3 ounces Wisconsin asadero cheese, shredded, dividedRed pepper flakes to taste
Combine the juice of half a lime with the pizza sauce. Spread pizza sauce on crust. Combine queso blanco con fruitas and asadero in a bowl and mix well. Spread three quarters of the cheese mixture over the sauce. Top with remaining ingredients as listed and finish with remaining cheese blend. Bake at 450°F for 25 minutes. Serve hot.
