8 ounces (3 to 4) carrots, peeled, cut into julienne strips
2 Braeburn apples, peeled and cut into julienne strips
2 ounces extra virgin olive oil
1/2 ounce (1/8 cup) cider vinegar
1/2 teaspoon caraway seeds
Salt and pepper to taste
6 ounces Wisconsin Les Frères Cheese, cut into 4 slices
Preheat oven to 350°F. In large bowl, combine all ingredients except salt, pepper and cheese. Season to taste and arrange on 4 serving plates.
Warm the cheese in the oven for about 2 minutes, just until the cheese begins to melt. Remove cheese and place a slice on top of the carrot and apple salads.
