2 bulbs fennel, fronds removed, sliced into 1/3-inch thick slices
2 tablespoons olive oil
Salt and freshly ground pepper, to taste
1/4 cup white truffle oil
Wisconsin Parmesan, Aged Asiago or Pepato
Heat grill to high. Brush the fennel with olive oil and season with salt and pepper. Reduce heat to medium and grill fennel slices for about 4 minutes per side or until slightly charred and softened.
Place fennel on a platter and drizzle with white truffle oil. If desired, season with additional salt and pepper. Serve warm or at room temperature with Wisconsin Parmesan, aged Asiago, Pepato or another cheese of your choice.
