1 carton (16 ounces) cream style cottage cheese1 tablespoon milk1 tablespoon lemon juice1/2 teaspoon salt1/2 teaspoon prepared horseradish1 jar (2 ounces) pimento, drained1 medium carrot, cut up3 parsley sprigs
Blend first five ingredients at high speed until smooth. Add pimento, carrots and parsley. Turn blender on and off quickly to just chop vegetables. Chill until ready to serve.
