Orange Coconut Muffins

Servings: 12


3/4 cup flour
3/4 cup whole wheat flour
2/3 cup toasted wheat germ
1/2 cup sugar
1/2 cup coconut
1 1/2 teaspoons baking soda
1/2 teaspoon salt
1 cup sour cream
2 eggs
1 can (11 ounces) mandarin oranges, drained
1/2 cup chopped nuts

Cooking Directions:

In large bowl, stir together dry ingredients. Blend sour cream, eggs and oranges in small bowl. Stir orange mixture and nuts into dry ingredients until all ingredients are evenly blended. Spoon into buttered muffin cups, filling 3/4 full. Bake at 400°F for 18 to 20 minutes. Remove from muffin tin and cool.
