3/4 cup flour3/4 cup whole wheat flour2/3 cup toasted wheat germ1/2 cup sugar1/2 cup coconut1 1/2 teaspoons baking soda1/2 teaspoon salt1 cup sour cream2 eggs1 can (11 ounces) mandarin oranges, drained1/2 cup chopped nuts
In large bowl, stir together dry ingredients. Blend sour cream, eggs and oranges in small bowl. Stir orange mixture and nuts into dry ingredients until all ingredients are evenly blended. Spoon into buttered muffin cups, filling 3/4 full. Bake at 400°F for 18 to 20 minutes. Remove from muffin tin and cool.
