Grilled Burgers with Creamy Veggie Topping
1 pound ground beef
2 tablespoons chopped onion
2 tablespoons barbecue sauce
2 tablespoons cold water
1/2 teaspoon garlic salt
4 slices Italian bread, toasted
8 slices tomato
1 cup small curd cottage cheese
1/4 cup shredded carrot
1/4 cup shredded zucchini
2 tablespoons chopped radishes
1/4 teaspoon cracked black pepper
Combine beef, onion, barbecue sauce, water and garlic salt; mix well. Shape into four 5 inch oval patties. Grill or broil patties to desired doneness.
While burgers cook, combine cottage cheese, carrot, zucchini, radish and pepper. Top each bread slice with two tomato slices, burger and 1/3 cup cheese mixture.
