2 cups flour1 cup sugar2 teaspoons baking powder1/2 teaspoon salt2 teaspoons grated orange peel2 tablespoons butterJuice of 1 orange plus enough water to make 3/4 cup1 egg, beaten1 1/2 cups (6 ounces) shredded Wisconsin cheddar cheese1 cup fresh or frozen, thawed cranberries3/4 cup chopped walnuts
In large bowl combine flour, sugar, baking powder, salt and orange peel. Cut in butter. Mix in juice and water, egg and cheese. Mix in cranberries and walnuts just to blend thoroughly. Turn into lightly buttered 9x5x3-inch loaf pan; level top. Bake in heated 350°F oven for 60 to 80 minutes or until pick inserted into center comes out clean. Cool in pan 10 minutes. Turn out onto rack to cool completely. Wrap securely. For best texture and flavor, let stand at least 8 hours before slicing.
