Cranberry-Cheese Bread

2 cups flour
1 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
2 teaspoons grated orange peel
2 tablespoons butter
Juice of 1 orange plus enough water to make
3/4 cup
1 egg, beaten
1 1/2 cups (6 ounces) shredded Wisconsin cheddar cheese
1 cup fresh or frozen, thawed cranberries
3/4 cup chopped walnuts

Cooking Directions:

In large bowl combine flour, sugar, baking powder, salt and orange peel. Cut in butter. Mix in juice and water, egg and cheese. Mix in cranberries and walnuts just to blend thoroughly. Turn into lightly buttered 9x5x3 inch loaf pan; level top. Bake in preheated 350° F oven for 60 to 80 minutes or until pick inserted into center comes out clean. Cool in pan 10 minutes. Turn out onto rack to cool completely. Wrap securely. For best texture and flavor, let stand at least 8 hours before slicing.
