1/2 cup butter, softened2 eggs, slightly beaten2 cups flour2/3 cup sugar1 teaspoon baking powder1/2 teaspoon baking soda1/2 teaspoon salt1 1/2 cups apples, peeled, cored and shredded1 cup walnuts, chopped 1/2 cup (2 ounces) Wisconsin yellow or white cheddar cheese, shredded
Heat oven to 350°F. Butter a 5x9x3-inch loaf pan. Combine butter, eggs, and dry ingredients. Blend well. Stir in apples, walnuts and cheese. Turn into prepared pan. (Batter will be very stiff.) Bake 55 to 60 minutes. Let cool in pan 10 minutes; then remove and cool on rack.
