Jay and Donna Sommer milk 20 goats by hand at their farm in north central Wisconsin, gently handling fresh goat's milk so that it can be crafted into fresh, flavorful farmstead cheeses. Geiss is a soft/fresh Chèvre made in six flavors that won first place in its class at the 2008 American Dairy Goat Association Cheese competition. Somherset is a Cheddar-type goat's milk cheese that also comes in a caraway flavor. SommHerr Dairy also crafts a mixed-milk (cow and goat) Parmesan-style cheese.
