Cesar's Cheese
Cesar Luis learned how to hand-stretch cheese from his grandmother in her native Mexican state, Oaxaca. Today, he crafts this specialty—Hand-Stretched String Oaxacan Cheese—in Wisconsin. It has been recognized as the most authentic available, having won first in its category at the 2010 American Cheese Society competition, and a 2010 first place award in the world championship event. It is creamy, yet slightly tart. Luis also makes a Manchego-style cheese.
