Brunkow Cheese/Fayette Creamery
Brunkow Cheese, founded in 1899, is located in the rolling hills of rural southwestern Wisconsin. Makers of specialty and artisan cheeses, this fourth generation creamery sources cow's milk from 18 neighboring dairy farms. Specialty cheeses include raw milk Cheddars and spreads, and Brun-uusto, a Finnish-style baked cheese. The artisan cheeses, under the label Fayette Creamery, are handcrafted in small batches and aged in a hillside underground cellar. They include Little Darling,™ a French-style Tomme and Avondale Truckle,™ an English-style, raw milk bandaged Cheddar.

Butler Farms is the first licensed Grade A sheep dairy in the United States. The company's Camembert is made from sheep's milk and cow's cream with a light mold rind and rich, creamy texture. Other cheeses include Aged Tomme, a sheep's milk cheese with a white mold rind, Fresh Brebis, a sheep's milk cheese with a milder flavor and creamy spreadability, similar to Goat Chèvre, as well as Feta and Ricotta made from sheep's milk.
Carr Valley Cheese, a fourth generation company, is owned and operated by Master Cheesemaker Sid Cook. Sid makes many award-winning cheeses including specialty and American artisan blends of cow's, sheep's and goat's milk. The cheeses are a unique blend of Old World craftsmanship and creative innovation. The "American Originals" line has won more than 175 top awards, including 20 awards at the American Cheese Society competition in 2007, making Sid the most awarded cheesemaker in North America! Among the award winners are Gran Canaria, Cave-Aged Cheddar and Billy Blue.™
Castle Rock Organic Dairy is a family farmstead Grade A dairy producing a variety of dairy products, including fresh, wholesome organic (cream line) Whole, 2% and Skim Milk, as well as Chocolate Milk, Cream and Half & Half in glass bottles from a 125-cow organic herd. This MOSA-certified dairy also uses homemade recipes to craft Ice Cream in nine flavors including sweet cream, chocolate, blueberry, strawberry, mint chip, pistachio, peach, vanilla, molasses chocolate chip and various seasonal flavors. In addition, Castle Rock Organic Dairy crafts full-flavor artisan Cave-Aged Blue and Smoky Blue cheeses, as well as Raw Milk Cheddar, pasteurized Colby and Cheddar cheeses.
