Bleu Mont Dairy

Willi Lehner, a Swiss-American cheesemaker and owner of Bleu Mont, brings his experience of authentic Alpine cheesemaking to a collection of Wisconsin original cheeses. Made in small batches, these complex, full-bodied cheeses reflect the mountain tradition of using raw, organic milk from pastured cows. They are aged in a special cave, built into the landscape. Cesar's Cheese

Cesar Luis learned how to hand-stretch cheese from his grandmother in her native Mexican state, Oaxaca. Today, he crafts this specialty—Hand-Stretched String Oaxacan Cheese—in Wisconsin. Otter Creek Organic Farm

Milk from this farm's rotationally-grazed Holstein herd is used exclusively to craft Raw Milk Seasonal Cheddars. The flavor of each Cheddar changes with the seasons. In the spring, pastures are full of clover, rye and young grasses; while in summer, orchard grass, young corn and sorghum prevail. Roelli Cheese Company

Roelli Cheese has been crafting cheese in the same factory for four generations. Specializing in very small batch artisan production, the company uses milk from a single local farm. Dunbarton Blue, the company's signature cheese, is a cave-aged Cheddar with a slight bleu vein, providing the flavor of a fine English Cheddar with a hint of Bleu. The company also makes Cheddar Cheese Curds and some small batches of Jack Cheese, sold at the on-site retail store. A cheesemaking viewing area is open most weekday mornings.

Widmer's Cheese Cellars, Inc.

The Widmer family has operated the Cheese Cellars since 1922. The third generation company produces some of the most awarded Brick, Cheddar and authentic Colby cheeses in the world. Made only in small batches, the cheeses are handcrafted. The curd is moved by hand from the vat to cheese molds and each is hand-turned three times on the first day. Joe Widmer, a master cheesemaker, uses real bricks—the same ones his grandfather used—to press the whey from the curds. Widmer's Cheddar ranges in age from mild up to 8 years old.
