Caso Bolo Mellage is an American original made in a 3-pound ball, aged 2 years, and then cut into wedges. Made from sheep, goat and cow milk, this Spanish-style cheese has a mellow and naturally sweet flavor with a hint of caramel and Parmesan. Although it has a firm texture, it may crumble when cut. This cheese shreds well and melts beautifully.
