Heat oven to 350°F. Spray 12 muffin cups with cooking spray. Cut smoked sausage into 12 rounds; set aside.

In medium bowl, combine oats, flours, baking powder and baking soda; make a well in center and set aside. Combine buttermilk, honey, oil, and egg. Add to flour mixture and stir just until moist. Gently fold in 1 cup cheddar. Scoop batter into prepared muffin cups using a 2-ounce (1/4 cup) scoop. Push one sausage round into each muffin center and cover with batter, using back of a spoon. Sprinkle remaining cheddar over muffins. Bake 15 to 18 minutes, or until golden and set. Refrigerate any leftover muffins.
