Heat oven to 375°F. Working with 1 sheet of puff pastry at a time, cut each sheet into 16 equal rectangular pieces (about 2 1/2 inches by 3 3/4 inches), yielding 32 puff pastry pieces.

Cut brie into 16 pieces and set aside.

Lightly beat egg with splash of water. Brush half (16 squares) of puff pastry pieces with egg wash and place piece of brie on each. Drizzle with honey and add several leaves of thyme. Reserving some for topping.

Top brie and honey pieces with remaining puff pastry. Use fork to crimp edges together, making sure they are well sealed.

Place pastries on parchment paper-lined baking sheet and brush tops with remaining egg wash. Sprinkle with sea salt and remaining thyme. Bake 12-14 minutes or until puffy and golden brown. Remove from oven and serve immediately.
