Swiss French Onion Mushroom Melt

Heat oil in large sauté pan over medium heat. Add onions and cook over low heat, stirring often until onions are caramelized. Season with salt and pepper. Deglaze pan with sherry. Remove onions without scrapping bottom of pan; set onions aside. Add stock and simmer, reducing by 1/3, and reserve. Makes about 1 pint onions and 1 1/2 pints jus (stock).

To make sandwich, heat broiler. Slice bread in half and toast on grill or griddle. Smear bottom with aioli and top with beef. Top with shredded cheeses and place under broiler until cheese is melted. Top with portion of reserved onions; close sandwich. Serve hot with a side of jus.
