Place tortillas on flat surface and spread each with half cream cheese. Place thin layer of roast beef over cream cheese, leaving 1-inch from outer edge bare. Place pepper rings down center of each tortilla. Sprinkle with pepper jack. Tightly roll tortillas; wrap in plastic wrap and refrigerate until ready to serve.

To serve, slice each log into 10 1-inch slices. Snack on end pieces and serve the 16 inner slices.
